At 2.21× in 2020, a packer had room to work. At 1.57× today, that buffer is gone. Cattle cost is up over 120% since 2019. The cutout hasn't kept pace. Every cut in the box tells a different part of that story.

The compression isn't uniform across the box. Here's where each cut stands versus its 2021 peak:

Every cut in that list peaked in 2021 and has compressed every year since. Short rib has given back nearly half its peak ratio value. Strip loin is down a third. The headline cutout number doesn't show you this — the cut-level ratios do.


WHAT THIS MEANS FOR BUYERS AND OPERATORS

The ratio is the number that tells you whether a packer has margin to run or margin to protect. When it's at 2.21×, they can absorb cattle cost volatility and still move product. When it's at 1.57×, every dollar of cattle cost increase comes directly out of operating margin — and the decisions that follow (slower kills, tighter supply, selective selling) are exactly what you're seeing in the market right now.

This is why the cutout headline can look stable while packer behavior signals stress. The ratio is the mechanism underneath it.
